Single serve chocolate cake

Yes, I’m a nutritionist, and yes, I eat cake.  I’m not a sweet tooth, in general I prefer savoury, however sometimes I need a little bit of chocolate, don’t we all?

I wanted to find a recipe that doesn’t use a lot of ingredients and is easy to follow and in the end I used a couple of different recipes to create this cake.   

A single serve is great if you want a little cake with your morning tea or a spur of the moment dessert after dinner.  It is also good if you can’t stop at just one piece of cake and end up feeling sick from overeating when there is a whole cake in front of you.

Use good quality, dark chocolate, and whatever sweetener and flour you prefer.

Ingredients

·        1 tablespoon butter

·        45g dark chocolate (about 7 squares)

·        1 egg

·        ½ tablespoon sugar

·        1 teaspoon flour

Method

·        Preheat your oven to 190°C

·        Butter and flour a small ramekin

·        Melt the butter and chocolate in the microwave.  Heat for short bursts and stir frequently.  You can also use a double-boiler, but the microwave is a lot easier and less to clean up.

·        Add the sugar to the melted chocolate and butter and stir well to combine.

·        Add the egg to the mixture and stir well to combine.

·        Add the flour and stir until just combined.

·        Pour the batter into the ramekin and bake in the oven for 8-12 minutes.  The longer you cook the cake the less molten it will be in the centre.

·        Remove from the oven and allow to stand for 2 minutes to cool slightly.

·        Invert the cake onto a plate and enjoy!

 

It is best eaten immediately, however if I can’t finish it all I pop it in the fridge overnight and warm the leftover cake in the microwave the next day and it is still great.
